Healthy Snacks

I love salt! I try not to use it often but lets say…..hmmm…. once a week out of the month :) I am craving anything salty. Especially Lays potato chips. I think I may be able to go through half of a regular size bag in one setting. No es good! Well, I’ve been into Kale lately and I’ve been hearing about Kale chips. So I was like, “I gotta try this.” I found my new Lays potato chip!! (Cookie cue the tap dancing). It has the saltiness I need but I’m eating a veggie not a processed potato. And they are easy to prepare.

This is an off the top of my head recepie so there are no exact measurements.

Tear kale into bite sized pieces and rinse. Make sure to dry the kale well. If you have a salad spinner use that to dry. Put kale into a mixing bowl and coat with olive oil. Do not drench. I learned the hard way. Just enough to coat all of the kale. Sprinkle with salt. Whatever you find appropriate. Less is more though! Toss the kale to mix the salt and olive oil. Spread the kale in a single layer on a baking sheet. Bake at 350 for 10-15 minutes until kale is crisp.

Note: This snack is better eaten the day you prepare it. I tried to save some in a ziploc bag. Do not do that. It turned soggy and I threw it away. :(

Stuffed Bell Peppers W/ Black Eye Peas & Rice

There are a lot of ways to stuff a bell pepper but my go to recipe will not disappoint.  It’s quick, easy, and not fussy at all. It is also very filling.  If you would like a healthy meal that does not take too much time to throw together, you should try it out!

2 Garlic Cloves minced

1/2 tsp Salt

1/4 tsp Cayenne Pepper

1tsp Fresh Oregano-chopped

14oz Can Stewed Tomatoes

1Cup Brown Rice (for this post I used Jasmine rice but I do prefer brown rice)

1 1/2Cups Cooked Black Eye Peas (canned)

4 Bell Peppers

1/4Cup shredded Mozzarella Cheese

Foil, baking pan, cooking spray

Prepare:

Over medium heat, cook garlic for 1 minute. Stir in seasonings and tomatoes. Add cooked rice & cooked peas. Heat until rice absorbs liquid. Cut tops off of peppers and remove seeds and veins. Trim bottoms of peppers slightly to stand upright. Stuff peppers with rice mixture; arrange in sprayed baking pan. Cover with foil and bake until peppers are tender, about 30 minutes. Remove dish from oven, sprinkle with cheese. Return to oven until the cheese melts. Serve.

 

Farmers Market

This past weekend I went to the farmers market in Camarillo. It’s been awhile since I’ve been to a farmers market. I forgot how intoxicating fresh fruits and veggies are! I don’t think I can go back to getting them from the grocery store….actually, I know I will not be getting them there anymore. My friend I was with made us all a meal later on with the produce he bought that day. You could taste the freshness and quality. Perhaps it was a mental thing…I don’t know. All I do know is that I am hooked again.
