Healthy Snacks

I love salt! I try not to use it often but lets say…..hmmm…. once a week out of the month :) I am craving anything salty. Especially Lays potato chips. I think I may be able to go through half of a regular size bag in one setting. No es good! Well, I’ve been into Kale lately and I’ve been hearing about Kale chips. So I was like, “I gotta try this.” I found my new Lays potato chip!! (Cookie cue the tap dancing). It has the saltiness I need but I’m eating a veggie not a processed potato. And they are easy to prepare.

This is an off the top of my head recepie so there are no exact measurements.

Tear kale into bite sized pieces and rinse. Make sure to dry the kale well. If you have a salad spinner use that to dry. Put kale into a mixing bowl and coat with olive oil. Do not drench. I learned the hard way. Just enough to coat all of the kale. Sprinkle with salt. Whatever you find appropriate. Less is more though! Toss the kale to mix the salt and olive oil. Spread the kale in a single layer on a baking sheet. Bake at 350 for 10-15 minutes until kale is crisp.

Note: This snack is better eaten the day you prepare it. I tried to save some in a ziploc bag. Do not do that. It turned soggy and I threw it away. :(

Cookie

I nick named my sister Cookie a couple of years back. I’m not sure how the name came about or even why I started calling her that but it just stuck. Well, today I give thanks to God for letting my sister make it to see another year. Thirty-four and counting! (I’ve known her since she was 2) :)

Cookie has always been the perfect example of a big sister. I look up to her so much. She is smart, hilarious, classy and always respects others even when some do not deserve her respect, she has dignity and intergrity. She has always been there for me no matter what! Even when she is having a bad day, she will put it aside to let me vent so that my day is better. We only have each other to lean on and no matter where she is or what she is doing if I am having a “crisis” she will drop everything and start plotting ways to fix the problem or plotting how to make it better…LOL. I know I stress her out sometimes but that is why I look up to her so much. She never lets the stress show! She is the only one I can argue with one minute and the next minute we are cry laughing over the whole thing. I love her.

Cookie, I am so happy that you are MY SISTER. I could not do this life without your constant encouragement, love and sometimes your “tough” love when I need it. Thank you for all the memories we have shared thus far. This journey would not be the same without you here with me!
